Just looking back to when Steven and I first met, we used to have so much fun together. I met him in an Archeology Class that we were both attending, when we were in college at Mississippi State University. It was February 1994, and from the first time we met, we hardly went a day without spending it with each other. The university would have concerts and exhibits we enjoyed going to together, but the most fun I remember having, was going to the MSU Bulldog Basketball games. We would have a blast, and really neither one of us were huge basketball fans, but I guess when you don’t have the money to do anything else, a free basketball game can be just as fun. The MSU Bulldogs were a pretty great team that year, and then two years later they made it to the Final Four during the NCAA Tournament. We were so proud of them.
Another thing we enjoyed doing together…eating. Probably why we both have gained so much weight over the last few years. We had so many favorite restaurants that we would love to go to. Barbeque at Little Dooey’s, Chicken Tenders and Fish Bowl Draft Beers at Oby’s, Club Sandwiches at the Bulldog Deli, and the infamous Fried Cheese at the Cotton District Grill, those things were huge and batter-fried. You’d probably have a heart attack just looking at them.
Oh well…those were the days. Atleast we have some great memories to tell the kids one day.

Can I hear a big….YESSSSSS!!!! Guess you can say I’m kinda ready for the kids to go back to school. Good thing is, they are ready too. Christopher was sick the week before, and only went one day, so it’s like he has been out for 2 weeks. I’m just ready to get my routine back on track. All of the kids have been also sick with a really bad stomach virus. When one would get over it, then the next one would get it, and the babies had it at the same time, so that was real fun. Finally, everyone is well.
Thanksgiving was good. I cooked for me, Steven, my dad and my brother. It wasn’t quite the same without my mama (and never will be), but it was still good. We are still eating leftovers, and I will probably have to throw out some stuff tomorrow. I hate doing it, but I think we are done.
Once again, I’ve been absent again. Everyone has been sick in my house including myself. Christopher was home 3 days with fever and chest congestion. He’s on antibiotics and is doing much better now. He finally went back to school today. Then I’ve been dealing with an awful stomach virus. Won’t need to go into any detail on that one. YUCK! Now the babies are battling a running nose and bad cough. Allie is the only that’s been just perfect, which I’m so thankful for and hope she stays that way.
I thought I would go ahead and post some pics of the kids in their Halloween costumes. Christopher was a vampire (Dracula), and Allie was an adorable pirate. I dressed the babies up in the same Ladybug costume and took some pictures, but they stayed home with my dad while I took the other two trick-or-treating. As you can tell, Emma is not very happy in her little costume. Also here are some pictures of Steven carving the pumpkin and Christopher in his Gene Simmons Kiss makeup that he absolutely begged me to do. Thank goodness he changed his mind and decided on the vampire costume. Pheww!! Of course, Allie had to get in on the action, so I made her a mustache and beard. Also, I got a cute picture of Christopher scaring her with his makeup.
With the holidays coming up, I thought that I would share some of my recipes and my mama’s great recipes. Here’s a great recipe that has always been a hit at parties during the holidays. It’s a good alternative to your regular rotel dip with velveeta. Instead you use cream cheese and sausage. Here it is:
Sausage Rotel Dip Recipe
- 1 lb bulk sausage
- 2 (8-ounce) packages cream cheese
- 1 can Rotel tomatoes and green chilies with juice (do not drain)
- Brown sausage in skillet; drain excess grease.
- Add softened cream cheese.
- Add Rotel (with juice) and mix well.
- Pour into small casserole dish and bake at 350 degrees for 30 minutes or until nice and bubbly.
- Serve hot with Fritos Scoops or Tostitos.
- Recipe can also be doubled using 2lbs of sausage, 4 – 8oz cream cheese, and 2 cans of Rotel tomatoes using a large casserole dish.
